## What makhana is

Makhana (Euryale ferox), also called foxnut or lotus seed, is an aquatic crop
grown mainly in Bihar, India. The seeds are harvested by hand from pond beds,
dried, roasted and popped. It is naturally gluten-free, low in fat and a source
of plant protein, which is why it is used here as the base ingredient rather
than refined wheat flour.

## DHA and fortification

Some MAKHANZA products are fortified with DHA (docosahexaenoic acid), an omega-3
fatty acid. The DHA used is derived from marine microalgae, not fish, which makes
it suitable for vegetarians and vegans. It is supplied by Primas Bioscience, a
biotechnology company founded by a team from IIT Madras, with a facility at
Perundurai, Tamil Nadu.

The premix is thermostable above 180 degrees Celsius, which is what allows DHA to
be included in baked formats such as cookies without degrading during baking.
Typical loading is 50 mg of DHA per 100 g in a cookie format.

Products that are not fortified — plain roasted and raw makhana — contain no
added nutrients of any kind.

## Fasting and vrat

Makhana is traditionally eaten during Hindu fasting periods including Navratri,
Ekadashi and Shivratri, as it is not a grain. MAKHANZA raw and plain roasted
